Palak paneer is a famous north Indian vegetarian dish usually associated with the winter season. Its made from spinach, tomato gravy, paneer and seasoned with garlic, ginger and Indian spices. It is one of the most common dish you will find in Indian restaurants and dhabas. This palak paneer sabzi is perfectly balanced for its creamy taste and spicy flavors. Paneer pieces further give it a nice soft taste. It usually goes well with make ki roti, parathas, naan and boiled rice. You can also add some butter on topfor extra taste. Try this simple recipe and satisy your taste buds.

Ingredients:
300 g Spinach
½ cup Onions (finely chopped)
½ cup Tomatoes (finely chopped)
2 tbsp Cooking oil
200 g Cubed Paneer (aka Cottage Cheese, aka Tofu)
½ tsp Sugar
¼ cup Milk Cream
2 Bay Leaves
½ tsp Kasturi Methi (aka Dry Fenugreek Leaves)
2 tbsp Garlic (finely chopped)
1 tbsp Green Chilies (finely chopped)
Salt (according to taste)
1 tbsp Ginger Paste
½ tsp Turmeric Powder
½ tsp Red Chili Powder
1 tsp Coriander Powder
½ tsp Garam Masala
Instructions:
1. First wash spinach leaves thoroughly in water, you can also add a tsp of vinegar and salt which helps to remove any pesticides from leaves. Chop off hard stems as shown in video as they are difficult to cook. Once all leaves stems are chopped its time to boil the spinach. For this take a big pan or a pot and add spinach, half tsp salt, half tsp sugar. We are adding sugar to retain nice green color of spinach. Now add 1 cup of water and let it cook on medium high heat for 4-5 mins. Cook the spinach without covering it to get that beautiful green color of spinach. Keep shuffling spinach in between to cook all leaves.
2. When spinach is completely cooked switch off the heat and let it cool down for 10-15 mins. Now we will make spinach puree, so transfer boiled spinach to a grinder jar and grind it for 30-60 sec. Once grinded transfer it to a bowl, it should have consistency as shown in video.
3. Now lets prepare tadka for palak paneer. Add oil in a pan, when its medium hot add bay leaves, chopped onion, green chilies and sauté it on medium heat till onions turn light pink. When onions become little pink add garlic paste, ginger paste and again sauté for around 4-5 mins till ginger and garlic cook well and onions turn little brownish.
4. Now add tomatoes, salt, turmeric powder, red chilli powder, coriander powder and mix them well. Cover the pan and let it cook on medium heat for 8-10 mins. After 10 mina remove the cover and check if tomato mixture is cooked. Once they are cooked add spinach puree, garam masala and some fenugreek leaves to give nice aroma. Now mix it well and let it cook on medium heat for 5-7 mins so spinach absorbs all flavors.
5. After adding spinach make sure to cook with open pan as this helps in keeping nice green color to palak paneer. After 5-7 mins add paneer cubes and mix them well and cook for another 4-5 mins. If you want to make it vegan you can use tofu instead of paneer. Now at last its time to add some milk cream to give nice creamy texture to palak paneer. Keep the heat low and add ¼ cup of cream and mix it well with palak paneer and switch off the heat.
6. Now our delicious palak paneer is ready and its time to serve.
Tips n Tricks:
1. If you want to make it vegan, use tofu instead of paneer.
2. You can also add cashews instead of milk cream, soak 8-10 cashews in warm water for 15-20 mins and grind them into a smooth paste & add them instead of cream.
3. If you want more garlic flavor increase garlic quantity to further enhance palak paneer taste.
