This easy and quick vermicelli recipe is tasty, light and healthy at the same time. Sevai Pulao is a good alternative if you don’t want to have rice pulao. Add vegetables of your choice and have it in breakfast or as a snack. Enjoy them in breakfast with chai, ketchup or chutney. You can also pack it for your kids lunch box. So try it and enjoy.
Of Other Names: Sevai Pulav, Sewai Pulav, Sewai Pulao, Namkeen Sevai, Namkeen Sewai, Namkeen Seviyan, Namkin Sevai, Namkin Sewai, Namkin Seviyan, Sevai Upma, Vermicelli Pulao, Jave, Namkeen Jave Ingredients: 2 cups Vermicelli ½ cup Onions (chopped) 1 cup Tomatoes (finely chopped) 2 tbsp Cooking Oil ½ cup Potatoes (small cubed) ¼ cup Green Peas ¼ cup Carrot (finely chopped) Salt (according to taste) 1 tsp Cumin Seeds 1 tsp Turmeric Powder ½ tsp Red Chili Powder ¼ tsp Garam Masala Powder ¼ cup Green Coriander (chopped) Instructions: 1. For this first heat a pan at medium heat, when its hot enough put heat to low and add vermicelli. Now roast them for around 8-10 mins till they turn golden brown. Once they are roasted transfer them to a bowl, we will use them later in the recipe. 2. Now boil around 5 cups of water in a different pan. When water is ready to get a boil add vermicelli, ½ tsp oil, some salt and mix them well. I have added oil to prevent them from becoming sticky. Let them boil on medium heat for 6-7 mins, don’t overcook them otherwise they will become mushy. Just when they start becoming translucent, it means they are ready. 3. Now strain them with the help of a strainer or you can also use a colander. Keep them aside and cover them, so they don’t get dry. 4. Now lets start making masala. For this heat oil in a pan, when its medium hot add cumin seeds. When they start spluttering add onions and half cook them on medium heat. When onions become little pink add cubed potatoes, carrots, peas and sauté them on medium heat for 5-6 mins to make them little soft. 5. Now add tomatoes, turmeric powder, salt, red chili powder and mix them well. Now cover the pan and cook on medium heat for 7-8 mins till all vegetables are cooked. 6. After around 8 mins check if vegetables are cooked or not by poking them with a laddle. They look cooked now so its time to add boiled sevai. Finally add some garam masala and green coriander, adding them now will keep the fragrance of masala and coriander in sevai. Mix them gently with masala, so they don’t become mushy. Keep the heat low while mixing them. 7. When they are mixed well cover the pan, switch off the heat and let them sit for 8-10 mins, so that sewai can absorb all flavors and colors of masala. 8. After 10 mins you can serve it and enjoy. Tips n Tricks: 1. If you want to make it a one pot dish don’t boil sewai separate. Instead add water in the pan after step 5 of cooking vegetables. Then add sewai, cover then pan and cook for around 8- 10 mins on medium heat till sewai are cooked. 2. For the change you caa also add readymade pulao masala or biryani masala instead of garam masala. 6. You can also pre cook vegetables in microwave.
