These delicious Aloo Patties are best alternative if you want to have a crispy and spicy snack. They are made with readymade onion parathas filled with spicy potatoes filling of your choice. Aloo Patties are super tasty with nice crunchiness from outside and soft spicy potato flavors from inside. As they are quick and easy to make you can have them at anytime of the day. Other Names: Aloo Puffs, Aloo Patty, Aloo Puff Pastry, Potato Patties, Potato Puff, Veg Aloo Puffs, Veg Aloo Patties Ingredients: 4 Onion Flavored Indian Parathas 3 Medium Potatoes (boiled and peeled) 1 tbsp Cooking Oil Salt (according to taste) ¼ cup Green Peas (boiled) ¼ cup Green Coriander (chopped) 1 tsp Cumin Seeds ½ tsp Red Chilli Powder 1 tsp Coriander Powder ½ tsp Garam Masala 1 ½ tsp Amchur Powder Instructions: 1. To make patties I am using readymade Indian onion parathas as they give nice onion taste to the patties, if you don’t have parathas you can also use puff pastry sheets. You can easily find onion parathas in any Indian or Asian grocery store in the frozen section. 2. So lets start the recipe, first keep onion parathas out of freezer for around 20-30 mins so they become soft. 3. Now lets start preparing potato filling for patties, for this first semi mash potatoes as shown in video. Now take a pan and add a tbsp of oil, when its medium hot add cumin seeds and give it a little stir. When they start crackling put heat to low and add mashed potatoes and sauté them for a while. 4. Now add boiled green peas, salt, red chilli powder, coriander powder, garam masala, amchur powder and mix them well. If you don’t have amchur powder you can also add a tsp of lemon or to make it extra tangy. 5. Now cook on medium heat for 3-4 mins while continuously stirring to avoid mixture sticking to the bottom. If you see any big chunks of potatoes, just mash them a little with the ladle. At last add green coriander and mix it well with potatoes mixture. Now switch of the heat, transfer filling to a bowl and let it cool down. 6. Now potato mixture is cold enough so let’s start filling patties. For this take a fresh paratha and cut it from center into two halves. Now take half piece and place around 1 ½ tbsp of potato mixture around center and fold it from other side to make a triangle as shown in video. Now seal it well from all sides by pressing with fingers and finally use a fork to press all sides so that mixture does not come out while baking. Now make similar triangles with remaining paratha pieces. 7. Once all triangles are made paratha patties are ready to go in oven. Pre heat oven to 400 F or 204 C and bake all patties on middle rack for around 20-25 mins till they turn golden brown. 8. After 25 minutes take out the patties and look at outer crust color. Nice golden brown color shows they have baked perfectly. If they are not golden brown yet, bake for another 5 mins. Once baked to your satisfaction transfer them to a plate and just enjoy. Tips n Tricks: 1. Add lemon juice while making potatoes filling to give extra tangy taste to patties. 2. If you dont have parathas, just use puff pastry sheets. 3. You can make filled patties and freeze them to use later on for baking.
