Other Names: Gobi Manchurian Dry, Cauliflower Manchurian, Chinese Gobi Manchurian, Manchurian Dry, Gobhi Manchurian Ingredients: 16-18 Cauliflower Florets (medium size) ¼ cup All Purpose Flour (aka Maida) ¼ cup Corn Starch Oil (for frying and cooking) 1 tbsp Red Chilli Sauce 3 tbsp Tomato Ketchup 1 tbsp Soya Sauce ¼ cup Spring Onions (chopped) 1 tbsp Green Chillis (chopped) 1 tbsp Garlic (finely chopped) Salt (according to taste) Instructions: 1. First wash and dry all cauliflower florets. Now cut them into same medium size pieces. Just remember, don’t cut these florets into too big size. Once all florets are cut lets go to the next step. 2. Now we will make batter for cauliflower florets, for this take a big bowl and add ¼ cup all purpose flour, ¼ cup corn flour and ¼ tsp salt. Now mix all ingredients well. Once ingredients are mixed, start adding water little by little and keep mixing to make a lump free smooth batter. We are adding water little by little as we don’t want a very thin batter, it should have consistency like dosa batter. It should have slightly thick batter, in total I have used around ¼ cup of water. Now keep it aside, we will use this batter later for covering cauliflower florets. 3. Now lets make sauce mixture for gobi manchurian. For this first take a small bowl and add 3 tbsp tomato ketchup, 1 tbsp red chilli sauce, 2 tsp soya sauce and mix them well. I have used red chilli sauce but if you want you can also use green chilli sauce. Now keep it aside we will use this mixture later to make gravy. 4. Now we will start frying cauliflower florets, for this first heat oil in a wok at medium high heat. To check if oil is ready dip a small cauliflower piece, if it sizzles like this, that means oil is ready for frying. Now put the heat to medium and take the batter we made earlier, then add few pieces of cauliflower in it. Now cover all pieces with batter, and carefully drop in oil after removing extra batter like this. Here I am using a fork as its safer but you can also use your hands. Similarly add all other pieces and now fry them on medium heat for around 6-7 mins. Just make sure to keep flipping them at regular intervals to fry them uniformly. After around 7 mins check if they are cooked well by poking with a spoon, if they are soft that means they are ready. Now take them out on a paper towel so that all extra oil is absorbed by paper. Similarly fry all other cauliflower pieces. 5. Now lets make gravy for gobi manchurian. For this take another wok or a pan on medium high heat and add 1 tbsp cooking oil. When oil is hot, add white part of spring onions, 1 tbsp chopped green chillies, 1 tbsp garlic and sauté them for around 1 min. Just be careful to keep sautéing them continuously to avoid any burning as we are cooking on medium high heat. Now add sauce mixture we made earlier and then add ¼ cup of water. Now mix it well and let it cook for around 20-30 secs on medium-high heat. After around 30 sec add ¼ tsp salt or according to your taste but be careful not to add too much salt as we already have salt in all sauces. Now mix it again, and add all fried cauliflower florets. 6. Now mix them well so that gravy completely covers all cauliflower florets. Remember at this step of recipe not to overcook cauliflower florets otherwise they will become too soft, just cook them till florets are fully covered with sauce mixture. At last add some green part of spring onions, which also gives nice look to gobi manchurian and give it a little mix. 7. They are mixed now so switch of the gas. Now our super delicious Gobi Manchurian is ready so take it out in a plate and enjoy them hot.
